Fermentation Kinetics using Dimensional Analysis

Abstract

The literature contains few systematic studies of fermentation kinetics as it arises in tea estates. The design charts presented here were prepared using dimensional analysis. The computed distribution of fermentation kinetics agrees with observation to within 60% at all points examined. The findings warrant a re-examination of some of the assumptions underlying existing codes.
